Recipe: Taco Soup

1 lb ground chicken, turkey or beef (I prefer turkey)
1 large yellow onion, chopped
2 cups water
1 large can tomato sauce
1 large can diced tomatoes
1 to 2 cans yellow corn undrained
3 cans of beans of your choice ( I prefer 2 pinto and 1 black eyed pea) undrained
2 cans sliced olives or 1 can whole olives undrained
1 pkt of reduced sodium taco seasoning heat intensity of your choice
2 pkts of ranch seasoning
juice from 1 fresh lime
2 bay leaves

In your large soup pan, spray bottom lightly with pan spray.  Saute your chopped onion with seasonings of choice, such as lemon pepper, garlic and black pepper. Once onion is slightly browned, add water, bay leaves, seasoning packets and meat, making sure to crumble the meat.

Mix until seasoning is blended with the water then cover and cook on medium heat until meat is completely cooked.  Once meat is cooked, add remaining ingredients and simmer on your lowest heat setting for several hours, stirring occasionally.

You may have to add some water during the simmering process if soup becomes to thick.  If making in a slow cooker, cook on low if you will be gone all day or high if you want the soup to be done in a few hours.

Garnish with fresh diced tomatoes, onions, corn chips, cheddar cheese and sour cream if you choose and enjoy!
